The first is Aogami Super KUROUCHI series which feature beautiful Black finished texture with a core of Blue Paper Super Steel with a better hardness of approx.65 HRC, which provides excellent edge retention.

The second is VG10 black damascus series which feature 63 layers of Nickel Damascus-patterned blades with a core of VG-10 stainless steel for professional which provides excellent rust resistance and a long-lasting edge as well as its beautifulness.

And the third is SG2 MINAMO Hammered series with feature Beadily-hammered blades with a core (Super Gold 2 or R2) Micro Carbide Powder Stainless Steel with Half Rounded Octagonal Oak Wood dyed Japanese Lacquered (Urushi).


These have long been his popular series and we highly recommend you to have one of them for your kitchen.

Mr. Yoshimi Kato, one of the most promising blacksmiths, received the certification of the traditional craftsmen on February 2008 and took over his father’s company as KATO UCHI HAMONO (KATO Knife Manufacturing Inc.) at Takefu city, Fukui in 2018.
His father started kitchen knife production in 1928 and founded his company KANEHIRO UCHI HAMONO in 1958. He was awarded the Order of the Sacred Treasure, Silver Rays in 1987.
