<p><span style="font-family: arial, helvetica, sans-serif; font-size: 12pt;">The distinctive feature of a Sakai knife is in the combining of jigane and hagane. Starting with single-edged, layered knives, swordsmiths of the early Meiji era who during sword prohibition found themselves unable to forge swords, began to use their techniques to forge knives, hoping to fix the shortcomings of these knives and starting the creation of the Honyaki knife.</span></p>
<p><span style="font-family: arial, helvetica, sans-serif; font-size: 12pt;">The value in a Japanese sword is in the combination of both hardness and toughness that is created by combining hard steel with a soft core, and that the name “Honyaki” likely derives from quenching of a fully method of the all-steel blade where the clay applied on the blade is thinned only on the edge, signifying that the method of quenching was “similar to that of a Japanese sword”.<br />

<p><span style="font-family: arial, helvetica, sans-serif; font-size: 12pt;">Although western style knives are very popular, Japan has its own unique and amazingly sharp Japanese kitchen knives.</span><br />
<span style="font-family: arial, helvetica, sans-serif; font-size: 12pt;">The other day, a monthly meeting of cutlery wholesaler mates was held at a French restaurant where a member&#8217;s son works as a chef. Both the food and the wine were tasty, and just as everyone was in a good mood, the chef, the son of a member of cutlery wholesaler mates, appeared to greet us. After praising his cooking skills, I had the audacity to ask him to show me what kind of knife he uses, which is something I wouldn&#8217;t ask at a normal restaurant. </span></p>
<p><span style="font-family: arial, helvetica, sans-serif; font-size: 12pt;">The chef kindly showed me the knives he uses, a Yanagiba knife and a Deba knife, both of which, to my surprise, are the ones used at sushi restaurants!<br />

<p><span style="font-family: arial, helvetica, sans-serif; font-size: 12pt;">I thought it would be obvious that with the spread of Western cooking, the use of Western style knives (or Gyuto) would become more widespread, but he stated, “these (Yanagiba &amp; Deba) cut better, and are easy to use (for French).”</span></p>
<p><span style="font-family: arial, helvetica, sans-serif; font-size: 12pt;">Let’s illustrate the differences between Western knives and Japanese knives with a cross-sectional diagram. Figure 1 shows the cross-section of a standard knife. The left shows a Western (Gyuto) knife that is made entirely with carbon steel or martentistic stainless steel. The four on the left are Japanese knives, of which 3 are composite. </span></p>

<span style="font-family: arial, helvetica, sans-serif; font-size: 12pt;">Mr. Keiichi Fujii, a 3rd generation master sharpener who received the certification of the traditional craftsmen in the knife capital Sakai City (Osaka), got his start in the knife business while helping his grandfather in the workshop as a kid, and has more than 50 years of knife production experience and over a hundred years of knife history in his family. He continues to sharpen knives at high quality getting the popularity of his products. Recently he has been passionately passing down to young generation his excellent sharpening skills.</span><br />

About Daisuke Nishida</strong><br />
Daisuke Nishida is based in Kumamoto, Southwest Japan. He became a disciple to another blacksmith when he was 19 and after 9 years of training. In 2006, he went on his own way and set up his workshop.He has stuck to using an ancient Japanese manufacturing process &#8220;Warikomi&#8221; to forge blade at any cost. He is said only the best blacksmiths to rightly forge White Paper No.1 Hard Steel.We recommend you to enjoy his ancient-processed &amp; classical piece of work, different from general knives by other blacksmith.</span></p>

Of particular note is that he definitely applies &#8220;Warikomi&#8221; process to make any blade. The Warikomi is an ancient Japanese manufacturing process, (1)split the heated soft steel with a wedge, (2)insert the hagane steel into the soft steel bar, (3)hammer the merged steel bar to form it into a three-layered construction of steel sandwiched by the soft steel.</span></p>

About Daisuke Nishida</strong><br />
Daisuke Nishida is based in Kumamoto, Southwest Japan. He became a disciple to another blacksmith when he was 19 and after 9 years of training. In 2006, he went on his own way and set up his workshop.He has stuck to using an ancient Japanese manufacturing process &#8220;Warikomi&#8221; to forge blade at any cost. He is said only the best blacksmiths to rightly forge White Paper No.1 Hard Steel.We recommend you to enjoy his ancient-processed &amp; classical piece of work, different from general knives by other blacksmith.</span></p>
